Today we are going to prepare some Baked knives, an original appetizer recipe which will allow us to try them in a different way, since we almost always take them on the grill, in garlic or in stews with a sauce to dip bread.
I love snacks. It is almost when I enjoy the meal, whether accompanying the snack with a vermouth, a beer, or a glass of wine. Therefore, how did I have to turn on the oven to make a hake with potatoes to the baker, I took advantage of preparing these au gratin knives with a peculiar Provencal to enjoy them while the fish was made.

As with all razor recipes, the first thing is soak them and change the water several times to prevent them from having some sand. Meanwhile, we prepare a fish stock, boiling a hake head in water with some scrapes and shrimp heads. Of this broth we will only use 200 ml and the rest we keep it to make soups or use it in other preparations.
We strain the broth and reserve it. We prepare a Provencal mixing in a bowl the cloves of minced garlic, breadcrumbs, and very chopped parsley. Then, we add the 200 ml of the broth while stirring, until we get a sticky bread paste that we will use to cover the razors.
We open the knives by putting them in a hot pan with a drizzle of olive oil and when they open, we take them out by placing them aligned. Fill the knives with the mixture of bread, broth, garlic and parsley and put them in the oven, ten minutes at 190º until the Provencal dries, and three more minutes gratin at 230º, taking them out as soon as the knives have a beautiful golden color.
