Cod and seafood chowder, the Irish spoon recipe that will conquer you

Today we are going to prepare a cod and seafood chowder, an Irish spoon recipe, with a texture between soup and cream, and all full of delicious stumps of fish, seafood, and vegetables.

  • Prawns 8
  • Potato 4
  • Fish broth or fumet
  • Leek 1
  • Celery 1
  • Butter 50 g
  • Bacon 50 g
  • Fresh thyme
  • 50 ml white wine
  • Liquid cream for cooking to give body and decorate 50 ml

All ingredients, except for potatoes are cooked very quickly. Therefore, we begin by putting potatoes peeled and cut into irregular pieces, in a saucepan with cooking water and salt, leaving them to be done for about 15 minutes, without being fully cooked.

On the other hand, in a large skillet, melt the butter and saute the chopped bacon. Add the leek and celery, also very chopped and let them do a while, without roasting. We add the clams, which we will have had in cold water, changing it a couple of times, and cover with a saucepan lid to help them open. Once the clams are open, we take them out of the pan.

Add the skrei cod cut into tacos and the prawns, peeled but leaving the whole head and let them cook another couple of minutes on each side. Then we take them out and reserve with the clams. It's time to add the fish stock to our sofrito and the drained potatoes, letting them finish cooking with the stew we are making. Add the thyme branches and cook about five minutes more.

When the potatoes are ready, we return the prawns, clams and skrei cod and let it cook all together for a minute. It is time to add the liquid cream, just a little to bind a little and thicken the chowder and let our stew take a little body, stirring carefully so as not to break the pieces of fish. Sprinkle with chopped parsley and bring to the table.
