  • Tabasco sauce 5 ml
  • Dried oregano 3 g

Heat a little extra virgin olive oil in a pan and sauté in it the two types of minced meat, stirring constantly so that it browns lightly on all sides and is loose. Add the wine, oregano and basil and cook until the liquid evaporates. Remove from heat and reserve.

Chop all vegetables in brunoise. In a large casserole, we heat some extra virgin olive oil and we sauté them in order from highest to lowest hardness. We start with garlic and onion, after five minutes we add the carrot, pepper and celery. Let cook over very low heat, covered, for about 15 minutes or until tender.

Peel the tomatoes, cut them into dice and add them to the vegetables along with the meat that we have reserved, the Perrins sauce and a punch of Tabasco. We season to taste, cover and simmer for an hour and a half, stirring occasionally and adding some water if it dries too.
