We will begin by hydrating the gelatin leaves in abundant cold water for ten minutes.
Next, we cook the sugar and the salted butter in a small bowl over medium heat. When a candy forms, remove from heat and add the hot cream very carefully as it can bubble up and burn. Stir with rods until a light brown mixture of caramel and cream forms.
