  • Wheat flour 150 g
  • 90 ml warm water
  • Fresh baker's yeast half a pill
  • Crushed black olives or 2 tablespoons tapenade
  • Salt 5 g
  • Sesame seeds
  • Egg yolk 1

Knead the flour with the yeast, salt and water for ten minutes, and let the dough rest for 20 minutes at a warm temperature, next to a house radiator. Once the volume increases, we knead slightly to remove the gas and add the black olive paste or tapenade, mixing until obtaining a more or less uniform color mass.

Let stand for an hour so that the light dough, and then cut into small balls of about 50 g, putting each of them in the hollow of a muffin pan where we let them rest another 30 minutes.

Lightly varnish each muffin with a little yolk and sprinkle with sesame seeds so that they are well attached. When the yolk dries, we put the muffins in the hot oven with steam (or with a tray full of water), and the we bake at 200º for about 20 minutes, until the surface begins to brown.
